Job Summary

Marriott International is seeking an Executive Sous Chef to join its culinary team in Kampala. The Executive Sous Chef will be responsible for leading and inspiring the kitchen staff, overseeing food preparation across all hotel outlets, and ensuring that culinary standards are consistently met. This role requires a talented chef with proven leadership skills who can balance creativity, guest satisfaction, and operational efficiency.

The position involves supervising all food preparation areas including banquets, room service, restaurants, bars/lounges, and employee cafeterias, while also supporting essential back-of-house functions such as purchasing, food storage, and sanitation.


Key Duties and Responsibilities

1. Leadership in Kitchen Operations

  • Provide direction and supervision for daily kitchen activities.

  • Step in to cover staff roles during absences or shortages.

  • Set and monitor performance standards for culinary staff.

  • Lead by example in professionalism, communication, and integrity.

  • Foster teamwork, trust, and open collaboration.

  • Review staffing levels to balance guest satisfaction with financial objectives.

  • Conduct regular feedback sessions with employees to address concerns.

  • Demonstrate and train staff on new cooking techniques and equipment.

2. Culinary Planning and Goal Setting

  • Develop and implement purchasing and receiving guidelines.

  • Set performance goals, budget targets, and departmental objectives.

  • Ensure compliance with health and safety codes.

  • Manage expenses such as food costs, supplies, and kitchen equipment.

  • Participate in hotel-wide budgeting and financial planning.

3. Food Standards and Quality Control

  • Oversee menu development and food presentation.

  • Monitor the quality of raw ingredients and finished dishes.

  • Ensure food displays are visually appealing and up to brand standards.

  • Maintain compliance with sanitation and food safety regulations.

  • Oversee proper storage, receiving, and food handling procedures.

  • Personally prepare and cook high-quality dishes for special functions.

4. Customer Service and Guest Satisfaction

  • Provide outstanding culinary service that exceeds guest expectations.

  • Interact with guests for feedback on food quality and service.

  • Train staff to understand and meet guest preferences.

  • Handle guest complaints professionally and promptly.

  • Monitor guest satisfaction surveys and implement improvements.

5. Staff Training and Human Resource Management

  • Mentor and coach culinary staff to build skills and performance.

  • Conduct fair and consistent performance appraisals.

  • Support banquet and catering teams with menu knowledge training.

  • Monitor staff behavior, providing guidance or discipline as required.

  • Ensure compliance with Standard Operating Procedures (SOPs).

6. Additional Responsibilities

  • Report regularly to executive teams and management.

  • Analyze operational data to solve problems and improve efficiency.

  • Promote a safe, hygienic, and professional work environment.


Qualifications, Skills, and Experience

  • Education & Experience:

    • High school diploma or GED plus 6 years’ culinary experience, OR

    • A 2-year degree in Culinary Arts, Hotel and Restaurant Management, or related field plus 4 years of experience in food and beverage operations.

  • Core Competencies:

    • Proven ability to manage large-scale culinary operations.

    • Strong leadership, mentoring, and team-building skills.

    • Knowledge of food safety, sanitation, and HACCP standards.

    • Creativity and attention to detail in food presentation.

    • Ability to work under pressure and meet strict deadlines.
